HOMEMADE N U T BUTTERS

I don't know anyone who doesn't love a good spoonful of PB (except those who are allergic!)! Am I lying? But unfortunately many commercialised PB's can be full of sugar, salt, artificial fillers, colours and flavours and preservatives! These days though there are an abundance of PB's out there on the shelf of your local supermarket which are made from 100% pure nuts - which is GREAT! Additionally, we have a wide variety now of nut butters which are not only made from Peanuts, but consist of Almonds, Cashews, Walnuts, Macadamias, Coconut, Brazil Nuts, Hazelnuts - and the list goes on! There are also even blends of various nuts and the addition of superfoods such as chia seeds and ancient grains to bulk it up! Its so great that we have such a large variety - but whats ever greater is when you can MAKE YOUR OWN! EXPERIMENT. MIX THINGS UP. ADD WHAT YOU WANT. C U S T O M I S E! I LOVE getting creative with my nut butters, choosing a variety of nuts and adding delicious natural flavours/sweeteners such as cinnamon, vanilla, cacao, stevia, honey, maple syrup..the list goes on! What's even better is it is SUPER EASY and can be made in LESS THAN 10 MINS! So why not, instead of buying a pre-made nut butter, make your own this weekend! These two recipes are my two favourite, simple nut butters! Use this as a guide to get inventive!

ALMOND BUTTER

INGREDIENTS.

♥2 cups almonds

♥½ cup hazelnuts

♥½ tsp salt

♥1 tsp vanilla paste (no added sugar)

TO DO.

  1. Preheat oven to 180°C and line two baking trays with baking paper

  2. Place almonds on one tray and hazelnuts on the other and bake for 15 minutes or until toasted

  3. Allow nuts to cool and then take a tea towel, place the hazelnuts on this and rub the nuts between the tea towel, aiming to get as much skin off as possible!

  4. Then place, hazelnuts, almonds, salt and vanilla paste in a high speed processor and process until a paste forms. This can take up to 5 minutes and goes through various stages! Fine meal - oily paste - smooth nut butter! You may need to stop the machine every so often to push down the sides!

  5. Store your nut butter in a sealed container in a cool, dry place.

  6. THEN DIG IN!

CHOC HAZELNUT BUTTER (NUTELLA)

INGREDIENTS.

♥1 cup hazelnuts

♥1 cup macadamias

♥½ tsp sea salt

♥1 tsp vanilla paste

♥¼ cup cacao

♥¼ cup rice malt syrup

TO DO.

  1. Preheat oven to 180°C and line a baking tray with baking paper

  2. Place hazelnuts on the tray and bake for 15 minutes or until toasted

  3. Allow nuts to cool and then take a tea towel, place the hazelnuts on this and rub the nuts between the tea towel, aiming to get as much skin off as possible!

  4. Then place, hazelnuts, macadamias, cacao, rice malt syrup, salt and vanilla paste in a high speed processor and process until a paste forms.
