Love myself a good capsicum! With its versatility, beautiful variety of colours and health benefits - whats not to love!

BENEFITS

The following is a list of the many benefits a serve of capsicum can provide to you!

  • Low in energy and high in vitamins!

  • Lots of VITAMIN C, which powers up your immunity and keeps skin youthful! (yes please!) Keep in mind though red capsicums have the highest amount of Vitamin C!

  • Red capsicums also contain several PHYTOCHEMICALS and CAROTENOIDS, particularly beta-carotene, which provides you with antioxidant and anti-inflammatory benefits!

  • The capsaicin in capsicum REDUCES ‘BAD’ CHOLESTEROL, CONTROLS DIABETES, PAIN RELIEF and REDUCES INFLAMMATION!

  • The sulfur levels provide protection against certain types of CANCERS.

  • Good source of VITAMIN E, which keeps skin and hair lush and subtle.

  • Contains VITAMIN B6, which creates a healthy nervous system and helps with cell renewal.

  • Enzymes such as lutein, PROTECT THE EYES from cataracts and macular degeneration later in life!

USES

Here are some of my favourite uses for capsicum:

  • Chopped in a salad

  • Roasted and purred with chickpeas to make a delicious dip!

  • Sautéed and used as a burger/sandwich filler

  • Added to a pasta sauce

  • Used in shakshuka eggs!

INGREDIENTS. for 2 cups

  • 1 jar of roasted capsicum (try to ensure the ingredients are only capsicums, olive oil, salt and vinegar)

  • ½ cup basil leaves

  • 1/3 cup pine nuts, toasted

  • 1 tsp sea salt

  • 1 tsp ground black pepper

  • 1 clove garlic, minced

  • 1 tbsp red wine vinegar

  • ¼ cup parmesan, grated

  • ¼ cup extra virgin olive oil
