INGREDIENTS. for 4
1 bunch of asparagus ½ an avocado, sliced 4 radishes, thinly sliced ¼ cup pistachios, toasted ½ cup feta, crumbled
DRESSING 1 lemon, juiced ¼ cup extra virgin olive oil 1 tbsp white wine vinegar salt and pepper, to taste
TO DO.
1. Bring a pot of water to the boil and blanch asparagus for 2 minutes, ensuring there is still a nice crunch. 2. Make dressing by whisking all ingredients together 3. Assemble salad by creating a bed of asparagus and topping with radishes, avocado, pistachios and feta and drizzling over the dressing!
