Summer is coming to an end in Oz. So lets have one last salad harrah before the seasonal fruit a vegetable changes and the refreshing salads change to comforting soups!
This is one of my quickest and tastiest go-to summer salad recipes!

INGREDIENTS. for 4
1 packet of rocket leaves
4 slices prosciutto, sliced
½ cup baby bocconcini
2 peaches, sliced
DRESSING
1/3 cup extra virgin olive oil
2 tbsp balsamic vinegar
1 garlic clove, minced
Salt and pepper
TO DO.
1. Whisk all dressing ingredients together.
2. Assemble salad by layering rocket, prosciutto, peaches and bocconcini and drizzle over dressing.
