Can I firstly just say thanks to the cheese Gods who created the glorious Burrata cheese! With its firm outer skin and ooeey gooey centre – this cheese is to die for! This recipe is for a good go-to salad that is quick, easy and super fresh! The creamy burrata cheese turns into a decadent, yet light dressing for the salad, though can be substituted for a traditional buffalo mozzarella or bocconcini.

INGREDIENTS.
5 truss tomatoes, sliced
Handful of basil leaves
2 burrata balls
Salt and pepper
½ cup pomegranate arils
Extra virgin olive oil, to serve
TO DO.
1. Place the tomato slices and basil leaves on a serving platter and season well with salt and pepper
2. Top with burrata and pierce the tops to allow the cheese to ooze out
3. Sprinkle with pomegranate arils and drizzle generously with oil.
4. Toss to coat in the cheese.
